Shiitake 3782 (Lentinula edodes)

This is one of the most popular shiitake strains. Lots of commercial growers are pleased with this strain and they order it over and over again. This strain has small to mid-large brown-reddish fruitbodies and prefers mid temperatures (70-75 F).

Pros:

  • this is a high yielding strain
  • reliable fruiter
  • good shelf life

Cons:

  • too many fruitbodies on a block (sometimes you can pick up to 100 fruitbodies just in the first flush)
  • inconsistency in fruitbody size
  • soft-firm fruitbodies
  • fruitbody anomalies (present just like in other strains)

Flavor: depends on the substrate but could be light or intense (typical shiitake flavor)

Substrate: mostly hardwoods or soft woods (including aged conifer wood). It is not known to fruit on straw. However, worth trying to fruit it on mixed wood chips and straw.

Spawn run: depends on the substrate used, on alder sawdust takes up to 8 weeks until the popcorn stage and browning

No. of flushes: 2-3

The CHIEF NIWOT Oyster Mushroom

The CHIEF NIWOT oyster mushroom strain is a reliable strain with a wide temperature range. Several farms that we're working with are pleased with the results of growing this strain. When I asked them if they like better the Hungarian HK, I was told we prefer the Chief Niwot because of this and that.. Just to remind you - the Hungarian HK is considered one of the best oyster mushroom strains worldwide.

Temperature range: 60-80 F

Fruitbody size: small-mid, consistent

Color: dirty-white with brownish center.

Fruitbody consistency: fleshy-firm -good shelf life.

Grow method: works with the hydrated lime method, pasteurization or sterilization.

Substrate: straw, sawdust, or agricultural wastes [not known to grow on conifer wood]

Colonization time: fast colonizer [12-14 days at a 5% spawning rate]

BE: prolific strain with over 100% BE

Flavor: typical oyster mushroom

Marketing: this strain has a good market value especially when combined with other colorful oyster mushrooms in the same package.

The BRAT Oyster Mushroom

BRAT -is a great strain. First what you'll notice is the fat fruitbody clusters and the dark-blue color. I really reccomend you to try this strain and discover its valuable features.

Fruitbody size: robust clusters with large caps -what people want to see these days is 'big' and 'beautiful'

Color: when young, this strain has dark fruitbodies that tend to get lighter in color once they mature.

Shelf life: With fleshy-firm fruitbodies this mushroom has a good shelf life and it is suitable to be transported to longer distances in order to be sold.

Temperature range: Peferred temperature range is low-mid (50-75 F).

Substrate: grows practically on any plant that was once alive [has not been tested on conifer substrate though]. 

BE: 100-150% or higher depending on a complex of factors. 

Flavor: typical, oyster mushroom

Grow Method: substrate may be treated with hydrated lime, pasteurized or sterilized.

Marketing: this strain has marketing value especially when combined with random other colors: yellow [AM2], white [Chief Niwot], pink [VDE1] or brown [213].

Strain spotlight: The Salmon Oyster Mushroom -VDE1

The salmon oyster mushroom strain VDE1 is what i usually recommend farmers instead of Pleurtous djamour. There are few important differences that you will notice when you grow the salmon and the dajmor. First you will notice that the salmon has somewhat thicker fruitbodies which means that it doesn't dry out fast (quite common in djamor). Another important aspect is the warm salmon color which will simply amaze your clients and invite them to buy more. I had clients telling me that they really need this strain in their production because it attracts buyers. In combination with the blue BRAT, dirty-white ElmA, and yellow AM2 this pink oyster will offer your clients a colorful and flavorful pack. 

This is an exotic mushroom and once you receive a spawn bag you'll need to keep it at room temperature until usage [not in the fridge like some other oyster mushrooms]. The pink is an extremely fast colonizer, in many cases you'll notice fruitbody formation before full substrate colonization.

Flavor: it is an ornamental mushroom with a rubbery consistency.

Substrate: straw, sawdust, paper or agricultural wastes.

Strain spotlight: AM Brown 15 (Pleurotus ostreatus)

The AM Brown 15 is a great strain that produces large heavy clusters with a BE that passes 160%. In addition, it is one of the few strains that seems to be resistant to contaminants such as molds or bacteria. A quick colonizer this strain produces consistent sized fruitbodies, light-grayish in color with a good shelf life. This strain has a wide temperature range: 60 -75 (80) F and is suitable to be grown in different parts of the US. We highly recommend this strains for commercial production purposes.


Substrate: straw, hardwood sawdust, paper, coffee grounds or agricultural wastes.
Flavor: typical oyster mushroom
Grow method: it was successfully grown with the lime method [the one in the picture has been grown with this method], pasteurization or sterilization.

Strain Spotlight: The COLUMBUS strain (Pleurotus ostreatus)

What you see in the picture is growing on white sorghum grain, simply imagine how powerful this strain is: it broke up the plastic bag and came out to shine -we just placed it in the fruiting chamber and enjoyed the view. Several customers are very happy with this particular strain and currently it is part of their production line. Flavor, color, consistency, and power this are the basic features that characterize this strain. 

The pilei in this picture have a trumpet shape, however this fungus has typical flabelliform pilei -what you see is the reaction to the environmental conditions present in the grow room. Moreover, the color tends to be lighter in higher temperatures (turns dirty-white).  It is a s strain that tolerates well low and mid temperatures [60 -75(80)]. Feel free to experiment with it before growing it on a large scale. The BE varies depending on several factors but for this strain is over 100%. If you don't get this BE than probably there is something wrong with the ingredients or applied growth methodology.

Strain Spotlight: The Golden Oyster Mushroom (Pleurotus citrinopileatus AM2)

The golden oyster mushroom originates from environments with warm climates. This makes it suitable for cultivation in the warm season of the year. Paradoxically, the AM2 golden oyster mushroom strain is a special one: it simply fruits to lower temperatures [65 - 85 F] than its normal for this type of oyster mushroom. Another special feature of this strain is the robust and consistent size of fruitbodies. They are not only consistent in size but also firm (compared to what this mushroom is like -it is known to have fragile and soft fruitbodies) -this feature is very important for shelf life. Prolonged shelf life is what farmers need when they want to sell their mushrooms in order to keep them fresh for their clients. This means that this particular strain may be transported to longer distances. As you can see this has also the advantage that can be grown all year long and together in the same grow room with other oyster species that prefer low temperatures.

This cold tolerant strain may be grown on various substrata: straw, corn cobs, sawdust, or other agricultural wastes. Many farmers simply like it because it's easy to work with. The caps are light yellow with darker spots in the center. Color and taste are important features too. The warm yellow color of this strain combined with other colorful strains such as BRAT (dark blue), ElmA (dirty white), salmon VDE1 (warm pink), COLUMBUS (light blue) will form an excellent bunch ready to go on the market. It has a typical flavor (even better that most common oysters).

Strain Spotlight: Lentinula edodes STRAW

The Shiitake mushroom, known as Lentinula edodes has a long and storied history ranging all the way back from 199AD in China, to this day it remains in wide spread use as an edible and medicinal mushroom. Grown on hardwood substrates, conifer sawdust or woodchips supplemented with wheat bran or another type of grain. Some strains also find straw to be suitable substrate.

One of Aloha's top strains, L.E. STRAW is an admirable fruiter, growing on a wider variety of substrates than most Shiitakes. This particular strain grows on all the normal sawdust types as most shiitakes (oak, chinkapin, tanoak, hornbeams, alder, aspen, poplar, cottonwood, beech, birch, chestnut, hickory, maple, sweetgum, tupelo, willow), while also performing well on pasteurized straw and conifer type woods. This strain fruits best in the medium range of temperatures, 50-75 °F (10-24 °C) .
 While not the biggest caps in the shiitake world, L. edodes STRAW produces uniform and consistent fruit bodies a bit larger than normal. Common morphology includes firm brown caps with white edging and thick white stems, growing one cap per cluster. With a high biological efficiency of 60% dry weight (biological efficiency, or BE is a measure of how many fruit bodies, by weight, a growing block produces compared to the raw dry weight of the substrate), Lentinula edodes STRAW is a good choice for any grower looking for a diverse Shiitake. Strain spotlight: the brown-cap oyster mushroom (Pleurotus ostreatus 213)


Pleurotus ostreatus, or the oyster mushroom, is one of the world’s most easily cultivated edible fungi. As its Latin name “Pleurotus” implies the oblong caps of this tasty mushroom grow horizontally or sideways with respect to its vertical stem, and “ostreatus” refers to resemblance it shares with the oyster, a marine mollusk, making it just as easy to identify in the misty forests of the North-Western United States as it is in balmy India or subtropical New Zealand. Despite its global reputation, each oyster mushroom strain posses distinct traits, which dynamically alter its appearance, flavor, and its ability to be cultured, making a strain from China incomparable to a strain isolated from Florida. In this excerpt Pleurotus ostreatus 213will be characterized for its individual qualities as well those it shares with oyster mushrooms as a whole.

The distinct aesthetic, culinary, and adaptational characteristics of Pleurotus ostreatus 213 make it the ideal choice for beginner and master cultivators alike. Pleurotus ostreatus 213produces feathery, delicate caps that grow in a unique shingling pattern; this layering of fruit bodies minimizes the potential for dehydration and contamination to occur (favoring mushroom enthusiasts who are just getting started!). Its light brown caps are more photosensitive than a number of strains, providing a challenge to more experienced cultivators by developing growing conditions to obtain the ideal coloration for the optimal aesthetic dining experience.

The petite crowns of strain 213 provide benefits to any number of culinary endeavors. Due to the perfect size of the caps, these mushrooms require minimal preparation (the better to preserve the earthy flavor) and can be consumed in just a few bites. The velvety caps can be sautéed in cream for an almondy-rich sauce or combined with butter for a delectable meal in and of themselves.  The stems can be added to a stir fry to provide a woody contrast texture to an otherwise flat meal or removed later after the delicious mushroom flavor has seeped into the other vegetables. Even the mycelium can provide a cultivator with a delicious and nutritious supplement if dried and ground when added to tea, juice, or even bread and meatloaf.

 Pleurotus ostreatus 213 also holds the unique adaptation of being drought tolerant, making this strain perfect for drier climates. The wide range of temperatures (50-70 degrees Fahrenheit) optimal for fruiting this strain allows it to adapt to a number of environments. Six to eight weeks after colonization, fruiters are able to achieve 150% biological efficiency, and they are well into their third or fourth flush of premier oyster mushrooms (with many more to come!). When the block or bag of spawn is spent it can be recycled in compost or a garden to establish a prosperous micro-biota to enrich soil for crop production.

Pleurotus ostreatus 213 is a unique strain, having many exceptional individual characteristics, but it still belongs to the oyster mushroom group as a whole, so it shares the qualities of being able to colonizing a great number of substrates as well as being receptive to numerous decontamination techniques with all Oysters. Oyster mushrooms can grow on virtually any plant based material, and strain 213 is no exception to this rule. Many oyster mushrooms prefer a substrate low in lignin (the compound responsible for the structure of wood) such as straw, hard wood sawdust, and agricultural waste products like corn cobs, but it can grow just as prolifically on card board, fall leaves, coffee grounds, or any other plant based waste common to households.

Oyster mushrooms are a hearty group allowing for the substrate to be disinfected by lime pasteurization, soap, hot water, ash, or heat sterilization techniques. To perform a disinfection step, soak the substrate (straw is recommended for this method) in a solution of hydrated lime. The exact concentration is not critical but the pH should be high and when the straw is added, the solution should be a milky yellow color. Submerge the straw or choice substrate, weight it down so it does not float, and wait 12 to 24 hours. After soaking, drain the excess water, bag the straw and inoculate it with Pleurotus ostreatus 213 spawn. Soap is also a good disinfection agent. Make a strong soap solution, soak 12 to 24 hours; drain the excess water and inoculate. Oyster Mushrooms use straw and the soap as a nutrient source, so there is no residue soap left in the mushrooms; it is all bio-converted into mushroom tissue. The hot water method can also be used to pasteurize substrate. Either boil water and pour it onto the substrate, and allow it to soak until the water has cooled or boil the substrate in water for 1 hour (depending on the size of the operation). Drain the excess water. Bag and inoculate the substrate. Ash is a third means to pasteurize a substrate, and it follows the same procedure as the lime technique. Finally, the ultimate method to insure optimal sterilization of a substrate is to treat it with heat either in a pressure cooker or an autoclave. Depending on the specifics of the machine pressures will vary but the substrate should reach 121 degrees Celsius for 15-45 minutes. Allow the substrate to cool before inoculation procedures.

Oyster mushrooms are a well known group of mushrooms that are easy to work with for beginners, but they can also provide a challenge in developing the perfect flush for cultivators who are more experienced. While Oyster mushrooms as a group have many beneficial qualities for propagation like the ability to colonize versatile substrates and respond to any disinfectant technique, individual strains like Pleurotus ostreatus 213 have unique traits such as appearance, flavor, and adaptations that set them apart from the rest.

Strain Spotlight: Pleurotus pulmonarius AX

Pleurotus pulmonarius, also known as the Phoenix mushroom, or the Italian oyster, is very similar to its Pleurotus ostreatuscousins, often causing confusion when being identified. Its name is derived from its shape, Pulmonarius, Latin for 'lung'.  The Phoenix mushroom generally prefers warmer temperatures than the more cold weather ostreatus, making it a popular species for commercial growers in hotter climates.

The best example of Pleurotus pulmonarius Aloha has is the AX strain. Typically grown on Straw, these hearty mushrooms will also thrive on sawdust (alder, maple, oak, poplar, elm, aspen or cottonwood), and on some conifers. Growing small and flat in large cluster, this strain's fruit body is often round shaped, not the eponymous lung shape. Long thin stemmed with small gils extending down the stem. The caps of AX provide thick meat however and are delicious when prepared like most oysters. Like all pulmonarius, the AX strain grows better in hotter climates, with 75-85 F (24-29 °C) for the spawn run, and 50-70 °F (10-24 °C) fruiting temperature. AX yields very efficiently, with a BE of 120%+ weight biological efficiency. This strain is perfect for oyster growers in a hotter climate that don't want to air condition their growing chambers.
